In some regions of Brazil this recipe is also called chicken fricassé and it is great to let go when it comes to lunch or dinner, practical and that pleases everyone! To make it quicker to prepare, it's worth having cooked and shredded chicken breast in the fridge, because then just mix the ingredients for the cream of corn in a blender, sauté everything together in the pan and brown in the oven.

Ingredients for making Chicken Supreme with Corn Cream:

 1 cooked and shredded chicken breast

 1 can of corn

 1 cup of cream cheese

 1 box of sour cream

 ½ chopped medium onion

 3 chopped garlic cloves

 2 tablespoons of oil

 200 grams of mozzarella cheese

 100 grams of potato straw

 chopped parsley

 Black pepper

 salt

How to Make Chicken Supreme with Corn Cream:

Drain the corn and beat in a blender with the cream cheese and cream until it becomes a creamy mixture without too many small pieces. Reserve this corn cream.

Then put the oil, onion and garlic on the fire and leave it until it starts to brown. Add chicken, mix and leave for another 1-2 minutes.

Tip: This recipe can also be prepared with chopped raw chicken breast. To do this, add the chicken after browning the onion and garlic and leave it for a longer time, until it completely changes color.

Add the whipped cream in a blender to the pan and season with salt and pepper to taste. Leave on low heat for 5 minutes or until thickened, stirring occasionally. Turn off and mix in parsley to taste.

Tip: If you want, in this step you can also add chopped olives.

Transfer the creamed chicken chicken to a greased baking dish with oil or butter and smooth with a spatula or spoon. Cover with the mozzarella and the potato chips and bake at 180ºC for 20 minutes.

TIP: to make this recipe healthier, make your homemade straw potatoes.

Remove your chicken with cream of corn from the oven when it is golden brown. Serve with white rice and green salad and enjoy!
